Our bees forage mainly on wild thyme and thorny thistle, with sage, savory, and around ten other native herbs woven in, and just a trace of pine. Because they draw from so many plants at once, our honey is naturally multi-floral, never single-flower, carrying a little of everything pure the Cretan hillsides have to offer, in a complexity and nutritional profile that very few honeys in the world can match.
From hive to jar, it’s never heated, which means nothing is lost along the way, not the enzymes, not the pollen, not the nutrients raw honey is meant to carry. It is also widely celebrated as the only food fully absorbed by the human body, giving you natural energy the way nature designed it.
